Came in @ 1.074 using 1.75# honey. Nice & cool under my steps now (52F) so will switch to lagers. Found a great Kotzritzer (Schwartzbier)Klone recipe on Gambrinus' Mug. It calls for mostly Cz Vienna malt, some Dk Munich, and "German Dehusked Black Patent". That one sounds pretty close to your Carafa Special to me. Hops include Magnum (same hop as Bu lion) + Hall M'frueh , Wy 2278. Think I'll go for this one using Munich & 2 row. Cheers Chris |

I brew primarily lagers using #2308 yeast. I re-use the yeast from one smack pack for up to a year by harvesting yeast from each batch to use in my next brew. I am brewing down in New Orleans so I am fi hting the heat not the cold while brewing outdoors! I also brew other styles of beer, not just lagers. I often brew ales and belgian styles. I like the idea of ss kegs as brewing kettles. One Idea that I have had, but have not acted on, is to use refurbished water heaters for mashing and perhaps hopping. It seems hat they have some desirable features: built in drains, insulation, and thermostats. One sees a lot of these thrown out as garbage, I expect that some have heater problems but others may just be 'scaled up' - relatively easily fixed with acid (vinegar or something stronger). I am somewhat surprised that you would water that has been through a water heater (unmodified) as this exposes more solvent (hot) water to lead on fittings and other nasty things that like to build up in the heaters. Living in the SW I have easiest access to Glenmore water. I have a clear preference for Bearspaw water (from just drinking the stuff) without ever having seen a water quality report. I think that is worth the hassle of hauling some water from the NW or the flavour. Thanks for publishing this information! |
